Chocolate Mayonnaise Cake
published on Aug 31st, 2005 // 3 Comments
Mayonnaise is substituted for eggs and butter, and it makes the cake heavy and moist. Don't believe me then try it for yourself
INGREDIENTS
- 2 cups unsifted all purpose flour
- 1 cup sugar
- ½ cup unsweetened cocoa
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup mayonnaise
- 1 cup cold coffee
- 1 teaspoon vanilla
INSTRUCTIONS
1: Mix and sift flour, sugar, cocoa, baking powder and baking soda into large mixing bowl.

2: Stir in mayonnaise.

3: Gradually stir in coffee and vanilla until smooth and blended.

4: Pour into prepared pan.

5: Cook at 180° for about 25-30 minutes. Test with a skewer. If skewer comes out clean then it is ready. Serve with some ice-cream.

Chocolate mud cake usually has some gooey components, like a pudding consistency or a fudge sauce.
